The chef's selection course is the only one offered for lunch and dinner. The fact that 5 to 6 of the 10 dishes are fish dishes shows the chef's love for fish. The chef, who is also an angler himself, ships the fish directly from the fishermen on his boat. Among the seasonal fish, there are rare fish such as plum and cod that are hard to find on the market. The dishes are prepared with great care and exquisite cooking, and are always served at the perfect time. We do not forget to entertain our customers and strive to create performances that have a live feel.

Our store also features an excellent wine selection by the manager, who was a chef sommelier at Beige Alain Ducasse Tokyo, a two-star Michelin restaurant. We do not compromise on our wide lineup, which includes mainly French wines, New World trend wines, natural wines, wines from famous producers that are now considered mythical, and vintage wines. We also offer pairings that are selected from around 300 types, considering their compatibility with the food.

Chef Nemoto's love for fish began when he was in kindergarten. Influenced by his grandfather, who loved fishing, he naturally began to pick up a fishing rod, and while he was a student, he began handling and cooking fish himself. Since then, his love for fish knows no bounds, and after aspiring to become a chef, he trained at famous restaurants in France and Japan, and opened [NeMo] in June 2021. We have teamed up with manager Terajima, who has demonstrated his skills as a sommelier at many famous hotels, and are pursuing new flavors every day.
