``Kakuni Bankara'' is the basic taste of [Bankara], which is topped with melty kakuni that has been carefully prepared over two days. The secret to its deliciousness is the rare back fat of domestic pork called "A Fat". Cook separately to make a jelly-like mixture and mix it into the pork bone and soy sauce soup. When you put freshly made backfat in your mouth, it's like a capsule of flavor! As time passes, the flavor melts into the soup and harmonizes with the noodles and soy sauce.This is a hearty cup of Bankara that becomes richer as you eat it.
