ハヌリではサムギョプサル用の焼キムチ、キムチチヂミ用のキムチも、すべて手仕込み。 2日間たっぷりと時間をかけて漬けています。 ネギ和え用の長ネギはとことんこだわります。毎早朝、国産名産地の長ネギを吟味し競落してきます。あとは何と言っても熟成味噌が違います。
★活カンジャンケジャンコース（活渡り蟹醤油漬け/飲放別）海がしけた場合は入荷しません。ハヌリの超活は、殻を外しても内子は元気に動いてます。（9～１1月までは卵は入りずらくなります。未冷凍につき了承願）8dishes
写真は平成30年11月27日入荷の内子満タン日本一のカンジャンケジャンです。蟹は上がって（死んで）から急速に劣化が進みます。血液が急速に黒化して悪臭を放つんです。特に渡り蟹は他の蟹よりも劣化スピードが早いんです。 なのでハヌリでは活にとことんこだわります。ハヌリの蟹は元気そのもの！ご要望があれば仕入れた蟹の動画送ります。 ご予約いただいた当日に私が河岸で仕入れるのを基本にしています。（在庫も2日以上のものは提供しません） カンジャンケジャンは元気な蟹を、元気なうちに浅漬けにするのが一番美味しいと思います。
