We want people to enjoy the entertainment-filled food production that takes place in the kitchen behind the counter through Ramen Kaiseki. I want you to switch off from your daily routine. The idea came from that feeling. And the conversation you can enjoy behind the counter is similar to the feeling of being at your favorite bar. This is the reason why there are many repeat customers who continue to come here.

The ingredients and seasonings used in Ramen Kaiseki do not contain any chemical seasonings or additives. The soy sauce that serves as the base for all dishes is made with plenty of high-quality ingredients such as dried shrimp, dried scallops, dried abalone, and Rausu kelp. The noodles are formulated with a unique water content that was created through repeated research, and the noodles have a chewy texture with a water content of 47%. Based on the idea that ``I want to be responsible for everything people eat,'' I am conducting research every day.

ChefHideki Irie - Heretic of Ramen world
Born in Kumamoto Prefecture in 1972. He used to work as a detective, but after an encounter with a Ramen shop in his mid-20s, he turned to Ramen. In 2003, he opened "Noodle Theater Gen'ei" in Fukuoka, and then expanded to Tokyo. To date, they have created more than 1,300 types of Ramen, and each restaurant uses the kitchen as a stage for the customers, establishing a style that pursues entertainment. He has appeared on numerous TV programs and is known by many outside of Ramen fans as the ``maverick of Ramen world.''
