Sushi Hanaoka was founded in March 2018 with the goal of creating a place for people who want to enjoy fish to gather. Driven by the desire to "help people learn more about the deliciousness of fish that they don't yet know about," we actively purchase rare seafood such as white meat and sea urchin that are difficult to find in Tokyo. We purchase six types of sea urchin from all over Japan, from Hokkaido in the north to Kagoshima in the south. Hokkaido: Ezo Bafun sea urchin, Aomori: Bafun sea urchin, north of Tohoku: northern purple sea urchin, south of Tohoku: purple sea urchin (early sea urchin), Awaji, Seto Inland Sea, Kyushu: red sea urchin, south of Kagoshima: whitebeard sea urchin. By eating and comparing sea urchins at the same time, you can fully enjoy the differences not only in sweetness, but also in ``umami'', ``richness'', and ``sea aroma''.

Enjoy the conversation and sushi with the owner, Hanaoka. Counter seats where you can enjoy sake and wine at the same time. Especially recommended in the summer is ``Kellner Silver'', the highest grade of the Kellner wines produced at Izutsu Winery, which has a gorgeous, refreshing acidity and a dry impression. It goes best with white fish and fatty fish. Furthermore, our pickled tuna is prepared using a method that brings out its flavor to the fullest, and you will be surprised at how well it goes with this wine.
