Chef's specialty "Lemon Prosciutto with prosciutto". This dish was created by adapting a Sicilian pasta recipe in response to a customer's request for risotto. I have been blessed with many encounters through this cooking experience. In order to reproduce the large rice of Italy, we use Gifu's brand rice "Ryu no Hitomi", and the refreshing scent of lemon, the flavor of Prosciutto, and the moderate saltiness of cheese go well together.
