ChefToshiyuki Suzuki - Admiring Edomae and discovering its unique flavor
Born in Shizuoka Prefecture in 1970. He grew up as the eldest son of a long-established soba restaurant that has been in business since his great-grandfather's generation, and trained at his parents' home for seven years and at a Japanese restaurant for two years. At the same time, he was shocked by the authentic Edomae tempura, and honed his tempura skills on his own in order to reproduce the taste of the famous restaurants he had visited. In 2000, he opened "Sobanoji" in Shimada City, Shizuoka Prefecture. In 2016, he moved the restaurant to Nihonbashi, the birthplace of tempura soba. He continues to work hard every day, with the goal of returning to his hometown in the future.
Food Rich flavors born from respect and commitment to local ingredients
Suzuki never forgets to respect the ingredients of his hometown, Shizuoka, where he was raised. All the vegetables delivered directly from local farmers are fresh, and the tempura varieties unique to Sobanoji, such as Tamatoritake mushrooms, Shimada carrots, and native eggplants, are just some of the tempura varieties. Seafood is sourced mainly from Suruga Bay, and the restaurant serves several brands of sake from local breweries. The buckwheat flour is also produced in Shizuoka. The coarsely ground sobagaki is based on the taste his grandmother used to make for him as a child. Enjoy the rich Shizuoka climate that is infused into each dish.

Nihonbashi Sobanoji is located about a three-minute walk from Ningyocho Station, in a neighborhood that still retains a strong sense of chic downtown atmosphere. The restaurant has only eight beautiful counters made of cypress wood. A blue carpet is laid out at your feet, creating a comfortable space that is both dignified and unpretentious and friendly. The warm hospitality of the owner and his landlady is also exceptional. Many of the dishes that the owner has collected as a hobby are made by individual artists, and diners can enjoy the sight of them as they gaze upon them from behind the counter.
In the home of Edomae cuisine, enjoy the flavorful tempura made with ingredients from Shizuoka and the smooth texture of handmade soba noodles at the end of the meal.
