Our eel is grilled over binchotan charcoal for a long time to remove excess fat and create a fluffy texture. After the grilled eel is steamed, the small bones are carefully removed one by one. The result is a softness that is so delicate that it crumbles at the slightest impact, and a flavor that doesn't leave any greasiness in your mouth. Even our female customers enjoy many of them.
