We offer French cuisine inspired by Japanese ingredients and techniques, and desserts made with fresh fruit by our pastry chef that look like works of art. We also received the Best of Award of Excellence at the WineSpectator Restaurants Awards 2023. We have over 400 types of wine, with a particular focus on Japanese wines.

Born and raised in northern France, Bracaval was greatly influenced by his home garden and farm. From an early age, he developed a love and respect for food preparation, and that passion led him to Paris. And today, Bracaval serves Japanese French French cuisine at est, inspired by a deep respect for Japanese culture and ingredients. He travels all over Japan himself and makes no compromises when it comes to sourcing the ingredients used in his kitchen.
