Chef``24 Seasons Kisaku'' Fourth generation chef Yoshisada Usuki
Born in Tokyo. At the age of 18, he joined Kagurazaka Toyota (Kagurazaka) and began training in Japanese Cuisine. In 1998, he entered ``Hana Kagari'' (Odaiba), and in 2000, he entered ``Yakusaka Miyashita'' (Azabu Juban). In 2007, he served as the head chef at "Yakusaka Miyashita" (Marunouchi). In August 2019, he was appointed as the 4th head chef of “Nijushisekkisaku”.

We are particular about using seasonal ingredients, and propose menus based on the season approximately every two weeks. At ``Saku'', we will prepare dishes based on the theme of the 24 seasonal seasons. The 24 seasons are divided into 24 parts of the year based on the movements of the moon and sun, and are given names representing the seasons. In order to allow you to experience the 24 seasons with your five senses, we create dishes by combining seasonal ingredients that are divided into three categories: running, prime, and remnant.
