Our shop is affiliated with Kazuma Sake Brewery, a sake brewery founded in Oku-Noto in 1899, which brews sake from the Noto Peninsula, which has recently been designated as a World Agricultural Heritage Site, and uses ultra-soft water at an altitude of 1.7, one of the best in Japan. Our mellow sake pairs perfectly with flavorful dishes. Our sake master will introduce you to sake that can only be tasted here, such as freshly squeezed sake delivered directly from the brewery and limited edition sake.
Food Special soba noodles milled using the Dotsuki method
Our restaurant uses buckwheat flour made by milling buckwheat seeds grown in Horokanai, Hokkaido, using the doto method, which is characterized by its high aroma and original soba flavor. We prepare ``Sarashina'', which is made by grinding only the center of buckwheat noodles, and can be enjoyed as a finale to your meal. *1 What is the dopou manufacturing method? This is a very rare manufacturing method these days, in which the ingredients are pounded with a pestle instead of being ground into powder using a stone mill. Soba noodles are very sensitive to heat and lose their aroma and flavor, so we use the doto method, which does not generate frictional heat, to preserve the original taste.
