Natural raw mackerel caught off the coast of Shimane, a well-known specialty of Shusui, is served in a hearty shabu-shabu with black soup stock using Izumo shabu shabu traditional seasonings, local sake and kanro soy sauce.

Our store is a Tsumoto-style certified store, and our manager is a two-star certified engineer. This technique removes the rotten and fishy odor and brings out the natural flavor of the fish by almost completely draining the blood from the fish's body down to the capillary level. By cleaning and discharging using a special nozzle, you can prepare fish that is easy to eat even for people who don't like fish. It maximizes the flavor components and can be stored for a long time. We want you to enjoy Shimane fish even more deliciously. Please come and enjoy Shimane fish prepared using the Tsumoto method.
