Opened in Ginza in 2016 with the concept of Cantonese cuisine that continues tradition and innovation like the good old Hong Kong. You can enjoy a new type of exquisite cuisine that combines Cantonese cuisine with Western touches. We recommend the course menu, which uses seasonal ingredients and offers a variety of beautiful dishes in a Nouvelle Chinois style.
Food What is [Nouvelle Chinois]?
"Nouvelle Chinois" is a new style of Chinese Cuisine that is said to have originated in Hong Kong in the 1980s. The name is said to be derived from the French words "nouvelle", which means "new", and "chinois", which means "Chinese". Unlike Chinese Cuisine, which is served on a platter and placed in the center of the table, each dish is beautifully presented in a Western style, and its cooking method uses less oil and brings out the flavor of the ingredients.
