Born in Hokkaido in 1962, he traveled to France in 2002 and trained in Paris and Lyon. After returning to Japan, he worked as a chef at Ripaille Exquisse, and opened Salamangre de Izakaya in Toranomon in 2006. It moved to Ginza in 2013. While he specializes in Lyon's Local Cuisine, he is also passionate about researching traditional French cuisine and classical cuisine. Driven by his desire to "convey the culinary traditions of the Lyon region as they are," he captivates gourmets with his warm and simple dishes.

Chef Wakisaka values "authentic" Local Cuisine. Based on classic recipes, he serves dishes that recreate the flavors that ordinary people ate. The chef respects the natural flavor of the ingredients and does not use any additives. "Tarte praline," a local sweet from the Lyon region, is a time-consuming process that involves peeling each raw almond and coating them with red sugar, but it is an "authentic" dish that is an absolute must-have when talking about this restaurant.

When you open the door to the restaurant, you will see the checkered floor, the high ceiling with reddish purple wallpaper, and the paintings on the walls. The tablecloths, with their red and white checks, are a staple of Lyon bouchons (Cafeterias), and the restaurant has a comfortable atmosphere with a perfect blend of classic and casual. Here, in the back alleys of Ginza 7-chome, you can almost hear the hustle and bustle of Lyon.
