Others What kind of beef does Kato Beef Store handle?
The larger and faster the cows are raised, the better the profit margin, but Kato Beef Shop does not deal with huge cows, which are quickly slaughtered. Only conventional-sized Yamagata beef cows (heifers, A5 rank with BMS11 or higher) are auctioned at the Yamagata Meat Market. The reason why we are so particular about it is that it tastes different. Especially the marbled part. Female heifers have a finer texture and a lighter flavor than the commonly available bullocks. Please give it a try.

The beef we purchase at our store is not only based on its origin, but also on its producer, female, pedigree, age, and body type.We use the best technology to ensure that the beef has a sweet taste and aroma, and we offer it with confidence. Additionally, we try to sell all of the meat we purchase within 20 days after removing the bone.
