Food ``True carbonara'' without fresh cream
In Italy, heavy cream is not used in carbonara. It's not a statement of right or wrong, it's just that it is what it is. As long as each one tastes good, that's fine. It is characterized by its simple deliciousness, which is ``rich but not overpowering.'' Locally, I felt that ``Italian cuisine is the ultimate in simplicity.''
