Chef Naoyuki Kojima's ``Modern Italian Cuisine'' cuisine combines ideas from Local Cuisine from each region of Italy with Japanese-style meal ingredients unique to Japan. We use seasonal ingredients from all over the country, mainly from Kyoto, Kushiro, and Bungo (Oita), using traditional methods to create dishes with a modern essence.
