Nihachi Soba is a blend of Yamagata varieties and buckwheat flour based on local varieties from Fukui Prefecture. We work hard every day to bring out the flavor and aroma, and change the varieties and blends each season to get closer to the ideal. We boil it in seconds to make it even more delicious, so please eat it as soon as possible before it stretches. The condiments are sesame seeds and Matsuma wasabi, a high-quality variety produced locally in Izu. Please enjoy the best soup made with plenty of Honkarebushi from Makurazaki and Izu's famous water.

You can easily enjoy authentic Tempura, which is said to be ``tastier than Tempura.'' The frying oil is a luxurious blend of sesame oil. We use carefully selected top-ranked shrimp and fresh fish caught in Suruga Bay. Because we aim to be the ultimate in "ordinary soba restaurants," we are particular about our side menus. All ingredients are domestically sourced, Koshihikari rice from Aizu is used, and the garnishes are handmade, with no compromise on the details. Our rice bowl dishes and curry are also very popular with local customers.

The interior of the store has a calm atmosphere reminiscent of an old folk house. The large windows offer a spectacular view of nature, making it perfect for dining while traveling. At our restaurant, the most important thing is taste. We place importance on improving the service level as well as the atmosphere of the store, and aim to create a pleasant space.
