Food fish
We purchase wild fish from all over the country, mainly from Toyosu Market. Even the same fish can be completely different depending on the amount of fat and how it is processed. From there, we look at the condition of the fish and decide on what to leave, season with salt, season with vinegar, season with kelp, and roast with straw. Please enjoy delicious, natural fish in Shiga, a prefecture with no sea.

Delicious fish and Edomae sushi in Shiga Prefecture
We source delicious and rare fish from fishing grounds all over the country, and use fish from Lake Biwa and ingredients from Omi to prepare our dishes. The rice for our Sushi is Omi rice, and we use
...two types of rice, rice vinegar from Shiga Prefecture and red vinegar, depending on the ingredients. We also make Kanto-style tamagoyaki using Biwa trout and river shrimp caught in Lake Biwa, and we also serve seasonal seafood such as kombu-jime (kelp-cured) and vinegar-jime (salted small fish), fluffy boiled conger eel, and boiled clams!
