Delicious fish and Edomae sushi in Shiga Prefecture
We source delicious and rare fish from fishing grounds all over the country, and use fish from Lake Biwa and ingredients from Omi to prepare our dishes. The rice for our Sushi is Omi rice, and we use
...two types of rice, rice vinegar from Shiga Prefecture and red vinegar, depending on the ingredients. We also make Kanto-style tamagoyaki using Biwa trout and river shrimp caught in Lake Biwa, and we also serve seasonal seafood such as kombu-jime (kelp-cured) and vinegar-jime (salted small fish), fluffy boiled conger eel, and boiled clams!
