All of Maruki's meat is aged Wagyu beef, carefully selected Kuroge Wagyu beef, which is matured for around 40 days in a dry aging room controlled at a temperature of 0°C to 4°C and humidity of 80%, condensing the flavor of the meat. The meat is very soft. We also purchase whole animals, so please enjoy our aged meat from rare parts that are not normally available.
