Our store's style is to carefully select buckwheat flour from all over the country depending on the season, with a focus on elegant taste and moisture content. After carefully grinding in a high-quality stone mill to a ratio of 9 parts buckwheat flour to 1 part wheat, the dough is kneaded with an amount of purified water that matches the state of the flour, and is carefully rolled out by hand rather than by machine. The hand-cut dough is boiled for the optimal amount of time after ordering, then soaked in ice water to condense the flavor. Enjoy with homemade white soup made from bonito and kelp and Shizuoka-grown wasabi.

The ``Kamo Nabe'' is a specialty dish that incorporates the flavor of Kawachi duck, which is famous as a high-quality duck meat, and contains duck meat, garland chrysanthemums, green onions, mushrooms, and soba noodles. Other recommended courses include the Agu pork `` pork shabu-shabu Pot'' and the luxurious ``Whale Harihari Hot Pot'' where you can enjoy various parts of the minke whale. The ``maki Sushi'', which is made with sweet and spicy shiitake mushroom paste, is a very popular dish that includes eel, tamagoyaki, and mitsuba leaves.
