Chef① [Three things that the craftsman is particular about] ~ Meat commitment ~
Oita Wagyu beef is produced at our own farm, Takumi Farm. Oita Wagyu beef is kept under thorough numerical control for oleic acid, a type of fat component. It is a fat component called unsaturated fatty acid, and is also known as the main component of olive oil. Oleic acid is a smooth fat, so it doesn't harden even if it gets into your stomach. In other words, you can get marbled meat that won't leave your stomach feeling heavy! We bring peace of mind and safety to our customers with the passion of our producers. . .

We are particular about how we grill and eat our meat so that you can enjoy the original flavor and texture of the meat. Our employees are knowledgeable about how to cook meat, how to eat it using seasonings that double or triple the flavor, and even how to grill it. Another thing that is unusual for a Yakiniku (Grilled meat) restaurant is custom cuts. This style is possible because we have employees who are well versed in special meat preparations and have knife skills.

Rice Meister Mr. Fujii blends carefully selected rice that changes slightly depending on the season to match the taste of the meat.
