I fell in love with "Miyazaki Jidori" and have been incorporating it into my cooking for over 20 years. Jitō chicken, which is raised free-range in a natural environment, is soft, chewy, and has a juicy flavor. Normal young birds are raised for about 60 days, but Jitō chicken is raised for 120 to 150 days, resulting in a moderately muscular body. The liver and chicken fillet are cooked to perfection and seared to perfection, and when grilled over charcoal, the meat becomes even more chewy and the more you bite, the more delicious it becomes. Enjoy the local chicken that makes up 80% of the dish!
