We select farmers, select bloodlines and feed, and produce meat with just the right amount of marbling, rich flavor, and fat with a low melting point. The owner, Mr. Nakai, chooses the perfect A5 grade meat with a lot of beautiful marbling! He doesn't choose meat that is ``delicious'' without being fooled by that.
