Our specialty is the traditional French ingredient "foie gras", Kyoto's Japanese Japanese Confectionery "Shogoin Nama Yatsuhashi", and a terrine-like dish made with plenty of apples. The sourness of the crunchy apple brings out the smooth texture of the foie gras, and the chewy texture of the Nikki and Matcha Yatsuhashi adds an accent. Please enjoy the chef's specialties, which are a fusion of Japanese and French, with a glass in hand.

[Evolue] is particular about space. In our store, we use Kyoto furoshiki instead of white torches, and we use specially installed lights at Wagasa Hiyoshiya for lighting. In addition, the meat knife is an arrangement of Kyoto's ``Aritsugu'' knife. Our restaurant has a warm and welcoming atmosphere that makes you feel as if you have been invited to a friend's home.
