By bringing out the flavor of the soup stock drawn that day, and cooking quickly, the natural flavor of the conger eel is brought out and the dish is made to be soft. Furthermore, the remaining conger eel is used completely for the sauce, which is simmered to add flavor and richness. Warm up the soft boiled conger eel just enough to hold it in your hand.
