Food ``Nigiri'' made with Edomae-style preparation
Manager Yamanaka, a sushi chef who has inherited Edomae techniques, adds a special touch to every sushi before serving it to customers. We use fresh tuna shipped directly from Toyosu, Tsukiji. The sushi rice is made by mixing red vinegar with fluffy rice from Yamagata Prefecture, giving it a mellow taste that goes perfectly with the tuna. The chewy texture and rich flavor of the tuna create a blissful taste that is truly exceptional.

In order to bring out the best way to enjoy the food, we have put a lot of attention to detail inside the restaurant. The cooking area has been coordinated to serve as a stage for the sushi chefs, creating a space full of immersion even when viewed from the audience seats. The counter seats are made from a single board made from a 300-year-old Japanese cypress tree, allowing you to spend a relaxing and quality time surrounded by the scent of cypress.
