Food Commitment to the raw materials of soba.
Flour milling is carried out every day at Wabisuke Shukugawa. Did you know that freshly peeled buckwheat is green? We make three types of soba (finely ground, coarsely ground, and thickly sliced), each with a slightly different thickness and width.
Food For gatherings...we have courses available.
We offer courses (from 3,500 yen) where you can enjoy seasonal dishes and soba noodles to suit your budget. Please contact us for details.
Others Commitment to tableware
Tsuchiyamajin pottery is mainly made in Tokoname City, Aichi Prefecture, and many artists are involved in it. If you are interested in a solo exhibition, we have information at the store.
Food Commitment to Tsuyu
■The cold soup uses thickly shaved first-class Rishiri kelp from Makurazaki, which is caught only by pole-and-line fishing. We try to create a balance that will bring out the soba noodles when eaten with a little dipping sauce. ■In order to bring out the natural flavor of the fish, the hot soup uses mainly sun-dried fish, giving it a clear and flavorful broth. We take care to ensure that the aroma of the thickly sliced soba noodles and the flavor of the soup stock work together.
We will be celebrating our 5th anniversary of independence in October, and to mark this milestone, we will be changing our shop name from ``Kitahama Tsuchiyamajin'' to ``Sobajin Aki.''
