Chickens have various characteristics that change depending on the season and the individual chicken, such as tenderness, texture, umami, lightness, moistness, crunchyness, etc., so we use different parts of chicken and provide the best one for each season. We also offer some chickens that you won't find in other restaurants, such as "Amakusa Daio" from Kumamoto, which is used in Michelin restaurants, and "Oma Sakura" from Kagoshima, which is attracting a lot of attention. Our specialty is ``Firewood-grilled, Amakusa Daio's wood-tataki, Omao's grilled shabu, and wood-fired minced meat rice.'' Among them, ``Firewood minced meat rice'' is a course-only menu that is not available as a single item. The rice is [Hachidaime Gihei], which was specially selected for this menu. This is then combined with a secret chicken stock and cooked in an earthenware pot for the ultimate finishing touch. The must-try specialties can only be tasted as part of the course, so we highly recommend the home-made Kumafuto Beer, which has a refreshing taste, and the Kyushu Fruit Sour.
