The ingredients used are all natural, which the owner goes to the market every morning to purchase. We are particular about the temperature that allows each topping to taste its best, as well as the temperature of the shari. Toro (fatty tuna) takes a long time to develop its sweetness when it's cold, but by letting it come back to room temperature, it becomes the perfect consistency that blends well with the sushi rice. Since the owner used to work at a tea-related restaurant in Kyoto, the interior of the restaurant has a calming atmosphere reminiscent of a tea room, with tea utensils placed here and there.
