Enjoy the luxurious soup stock made from Soda bonito flakes, dried bonito flakes, and Rishiri kelp, the thick udon noodles that become supple the more you simmer them, and the deliciousness of fresh ingredients from the mountains and sea to your heart's content.
Food Mibiu considers dashi soup to be a dish.
The morning at Mimiu begins with making a dashi broth for two hours using Rishiri kelp from Hokkaido, dried bonito flakes from Tosashimizu, and dried honkarebushi from Makurazaki. The scum is removed and the dashi broth is clear and golden in color, concentrating the flavor, and is the key to the taste of Mimiu.

Including ``Uzura Soba (registered trademark)'' where you eat freshly boiled soba noodles with noodle soup containing quail eggs, ``Kitsune'' which is soaked in dashi stock, and homemade flour soba noodles made with seasonal ingredients. Please enjoy our homemade udon noodles.
