The same mirror surface we polish every day after closing has been used since we opened in 1992. A single piece of high-purity cast iron plate weighs over 1 ton. By keeping the temperature constant with a 3cm thick iron plate, you can achieve the desired degree of doneness. The chef's brilliant hands, the sound of cooking, and the aroma as the food is cooked right in front of you. The fun of watching and talking with the chef is the best part of Teppanyaki.
