...eading producing regions.The raw soba noodles are ground in the same way that grandmothers used to grind them in stone mills. Using buckwheat flour that has been ground once in a Karen stone mill, our craftsmen have painstakingly kneaded each ball at the Akasaka noodle factory, making our ``Nihachi soba noodles made with carefully selected, authentic homemade noodles'' with flavor and firmness. Our tempura is carefully selected and uses seasonal ingredients from all over Japan.
