We offer dishes that take advantage of fresh seafood, including sashimi platters made with the best fresh fish caught that day, with a focus on fresh fish delivered directly from the coast of Sado. Food Sado Koshihikari ice-cold aged rice cooked in a copper pot
Uses Koshihikari rice from Sado that has been aged in a snowy warehouse and cooked in a copper pot. We use Sado Koshihikari rice, which is stored as brown rice in a snow storage warehouse, and then moved to an ice storage room at minus 2 degrees Celsius for two weeks before shipping.The flavor and sweetness of the rice has increased through aging. A copper pot that makes full use of soft water with low mineral content, Kirinyama Sake brewing water ``Sansui'' and Niigata's traditional craft ``Tsuiki Doki'' technology, will cook rice fluffy and delicious. This is our specialty rice.
