In the Ina region of Shinshu, dishes using horse meat and horse offal have been eaten for a long time. Our horse meat is purchased whole, so you can enjoy a variety of different parts.

The Shinshu specialty [Shinshu Soba] is made with buckwheat flour from Nagano Prefecture that is sourced year-round, and is blended with two types of ground flour that are ground in different ways to create a unique flavor and texture. The amber-colored soba soup made with soy sauce from the long-established Marusho Jozo in Matsumotodaira is also exquisite!

We have over 30 types of Shinshu's proud local sake, so be sure to enjoy them with Shinshu's Local Cuisine! We also have a wide variety of alcoholic beverages, including Shinshu salad shochu made with local products!
