Using subtractive cooking that focuses on carefully grown ingredients, we create simple dishes that take advantage of the quality of the ingredients. Because we use the best ingredients of the day, the menu changes depending on the season and day. We only offer omakase courses that focus on one ingredient and explore the optimal cooking method. Please enjoy the freedom of culinary expression that is not bound by existing frames.
Food Dishes prepared in the best condition by expert chefs and carefully selected tableware
Using the chef's well-honed techniques, each ingredient is cooked using a heating method that suits each ingredient. Meat and fish are cooked slowly at low temperatures to retain moisture and bring out the best quality of the ingredients. Vegetables and fruits can be brought to their best state at any given time by baking, boiling, or frying them. In addition, we are particular about tableware, and use handmade vessels that have been adjusted down to the millimeter and gram level after actually talking with the artist. The gorgeous tabletop stands out against the simple interior and is visually pleasing.
