Born in Kyoto in 1975. He grew up watching his father, a Sushi chef, and pursued a career in cooking that he had dreamed of since he was a child. After training at Yoshitora in Kyoto, Kappo Kaminru in Kitashinchi, and Komei ARIAKE Ariake branch in Tokyo, he moved to Bangkok. Owner and manager of Japanese-style meal restaurant [Onoki] for 15 years. After returning to Japan, he opened [Gion Taiki] in May 2018, and runs the restaurant as owner and owner alongside his father, who has been a Sushi chef for 50 years.
Food We serve dishes made with carefully selected seasonal ingredients!
We only use fresh fish delivered directly from Maizuru fishing port, carefully selected vegetables, mainly Kyoto vegetables, and carefully selected meat from a long-established butcher in Shichijo Gozen, Kyoto. Our daily and weekly ``Hassun appetizers'' are made with seasonal ingredients that increase in flavor with each season. We use seafood mainly sourced from Maizuru and seasonal vegetables. ※The image is an image.
