Craftsmen who wanted to carry on the traditional sushi tradition in Kyoto did not reduce sushi to a mere token, but perfected it as a dish that inherits the blessings of the sea, mountains, rivers, and earth. By using seasonal seafood sourced from trusted brokers, we focus on making the sushi that is right in front of us. In addition, by cooking rice harvested in Tamba with bonito stock and adding bonito to soy sauce, we create a delicious flavor with a mellow mineral flavor.

``Homemade Kawachidori'' is based on sushi from a good old Kyoto restaurant. The sushi is made with sushi rice and sea bream covered in senmaizuke, and is usually served with white turnip, but depending on the season, it is served with red turnip. In addition, ``sea bream'' allows you to enjoy the elasticity and flavor of white fish, and the fat between the skin and flesh that melts when the skin is parboiled enhances the elegant sweetness. You will be intoxicated by the rich flavor and the lingering aftertaste in your mouth.
