We serve seasonal vegetables in salads and Side Dishes dishes purchased from Koshimizu Farm, which produces completely pesticide-free vegetables in Hadano City, Kanagawa Prefecture. ``When I searched for the vegetables I wanted to eat, only pesticide-free vegetables were available,'' said the farm's agricultural director, who incorporates his thoughts into the dishes he serves.
