The main ingredient is fresh Wagyu beef, not frozen. We do not decide on the production area, and mainly use branded beef that is in the best condition on the day. After purchasing, the beans are aged at a low temperature in an ice-cold refrigerator to further condense the flavor. We take great care in preparing the meat, such as cutting the sinew and using a hidden knife, and the thickness, cut, seasoning, etc. are adjusted to match the homemade sauce, and each piece of meat is exquisite. Among them, the ``Thick Sliced Tongue'' is our signature dish.If you like condiments, try the ``Negi Salted beef tongue'' which has so much green onion that you can't even see the meat!
