Food Mainly crispy and fluffy locally grilled eel.
Since we do not add any steaming, we create a crispy and fluffy texture. We use thick domestic eel, mainly from Lake Hamana, that is freshly cut and grilled over high heat. We change the type of eel and the origin depending on the season, so we keep the texture soft and fluffy even in winter.
