As we are a store specializing in hormones, we are particular about hormones, which are the main ingredient! Generally speaking, many shops use torn pieces of kopchan. By tearing it, it loses its unique jiggly texture and flavor. Therefore, at our restaurant, we take the time and effort to turn the small intestine inside out, resulting in a concentrated flavor that retains the flavor! And, the hormones used in Motsu-nabe (Offal hotpot) are only from Wagyu beef, which is a higher grade than domestic beef!
