ChefKenji Oi - Chef who brings out the charm of Ibaraki ingredients
Trained for one year at a star-rated Restaurants in Italy. After returning to Japan, he studied under Chef Shinya Fukumoto of Casento in Kobe. In 2018, he became the chef of Azabu Juban "Courage", was featured in Goemiyo for two consecutive years, and won the Worldbest Restaurant 50 Discovery award. After that, he worked as a chef at ``ahillazabu'' and opened TSUMU in 2023. The restaurant offers innovative cuisine that utilizes Local Cuisine from 20 Italian regions and experience in a variety of culinary genres.

In order to bring out the maximum potential of the ingredients, he makes full use of the techniques of not only Italian Cuisine cuisine but also French cuisine cuisine, molecular cuisine, Spanish Cuisine, Japanese-style meal, and various other genres that he has learned so far. We use local ingredients from Ibaraki Prefecture for all our dishes, and strive to create dishes that can only be eaten in Tsukuba.
