Food Specially made golden whole grain noodles
Owner ZOE has a unique background, having trained not only at a ramen shop but also at a noodle shop. Through trial and error, we arrived at a recipe for custom-made noodles made from whole wheat flour, which is highly nutritious and enjoys the fragrant flavor and texture of wheat. It is said that a local noodle factory in Awaji Island has managed to give shape to the whole-grain noodles, which are difficult to knead and shape. The noodles were so delicious that even I, who is on a no-carbohydrate diet, couldn't help but order a second bowl. tears

ZOE says with a smile that she aims to be a homely store that everyone from children to the elderly can feel free to stop by. During our interview, it was very heartwarming to see him smiling kindly and starting a conversation with a high school student sitting at the counter by asking, ``How did you do on your final exam?'' Also, there were many repeat customers who came from far away touring on their motorcycles or road bikes, but that may be because they were drawn to ZOE's personality as well as the taste of the ramen.

ZOE's ramen soup is made from two types of bases. First of all, the chintan is a crisp and flavorful soup made with Awaji Island onions, ginger, kelp, niboshi, and bonito flakes that are slowly cooked over low heat without being boiled. The paitan soup is made from domestic loin bones that are carefully prepared, resulting in a mellow and creamy soup without any graininess. You can enjoy the different tastes of each of the four types: tonkotsu, miso, salt, and soy sauce.
