No garlic or umami seasonings are used, so you can enjoy the goodness of the meat and vegetables. It also goes great with miso sauce. The preparation incorporates Kobe Western Western Cuisine techniques to create depth. In addition, we use 100% peanut oil when frying Gyoza / Dumpling, so you can enjoy the rich aroma. Ganso Gyozaen is the birthplace of miso sauce. Since our establishment in 1951, we have been serving Gyoza / Dumpling with miso sauce in Kobe. During the Taisho era, the first generation went to Manchuria from Okayama Prefecture, learned about Gyoza / Dumpling in China, and came up with a unique idea to create a sauce that would appeal to Japanese people. In the past, this food culture was only found in Kobe, but now more and more restaurants in the Kansai and Kanto regions are selling miso sauce. It is likely that it will eventually spread throughout the country and the world. How to make miso sauce is a secret known only to the third generation.
Food Making Manchurian-style Gyoza / Dumpling skins (our store is the only one that still exists in Japan)
Manchurian leather making is a method adapted by the Japanese community to the Chinese style leather making that the first generation learned in Manchuria during the Taisho era. Until the 1960s and 1960s, many Gyoza / Dumpling restaurants in Japan used this method. Currently, our store is the only store in existence. The characteristics of this skin are that it has elasticity, allowing each skin to stretch nearly 30 cm, and contains moisture, making the Gyoza / Dumpling slippery and smooth to wrap without having to fold the folds.
