The sushi rice is a blend of Hokkaido rice and red vinegar. The soy sauce is based on Shodoshima soy sauce, and is made with kelp and bonito to create an original soy sauce. 80-90% of the ingredients used are from Hokkaido. We purchase tuna every morning from a market near our shop, and sometimes we purchase whole tuna. Our specialty is that we basically do not use additives and focus on bringing out the flavor of the ingredients to the fullest.

Each item is carefully finished using traditional methods. Season the flounder with kelp. The kelp absorbs excess moisture from the material, making it firmer. Furthermore, the flavor of the kelp transfers to the ingredients, giving it a deeper flavor. Salmon roe and salted fish are pickled in-house. We also offer sweet shrimp seasoned with kelp, octopus cooked with bancha, and homemade oinari. You can also takeaway during the day and at night, so you can enjoy the taste of our restaurant in the comfort of your own home.
