ChefChef Shogo Hayashi
Born in Shibetsu City, Hokkaido. After graduating from high school, he trained at a Local Cuisine in Sapporo from the age of 19.He took over the restaurant from his father, which was founded in 1971, and has continued to preserve Hokkaitei's flavor for 27 years. Because we want people to experience the authentic taste of our food at our restaurant, we insist on making our own dishes and never use frozen products. We take time to prepare our dishes, and we want our customers to enjoy authentic, delicious food that has been prepared by hand. I stand at the counter every day. The head chef says he would be happy if people could talk to him casually.
We have received crabs from the Okhotsk Sea! The crabs are at their most delicious after the drift ice has cleared. We also have asparagus and wild vegetable Tempura.
