At our store, which is particular about the ingredients we use, we carry carefully selected "Choshu Herb Chickens" that are raised in a natural environment.We do not use antibiotics or synthetic antibacterial agents, and we feed them rosemary, thyme, and sage. We use Hyuga Bincho charcoal for our special charcoal-grilled yakitori. The name charcoal comes from the Kishu Tanabe clan, a charcoal wholesaler in what is now Tanabe City, Wakayama Prefecture, Bitchuya Nagasaemon. It is made from white charcoal-grilled wood from the Fagaceae family called Arakashi, and is a valuable product that takes about 20 days to a month to produce from 6 tons of raw wood, weighing approximately 800 to 900 kg, by skilled craftsmen. By grilling with this charcoal, you can not only achieve high temperatures, but also the aroma of the charcoal and the ideal taste.

In addition to the 6 types of local sake from Hiroshima Prefecture that we always offer, we also recommend sake from all over the country that we purchase on a monthly basis!
