Food Ajikouta's cartilage soki soba made with carefully selected soup stock! This is the end! !
Cartilage soki soba made by the owner of an Okinawa Soba restaurant in Okinawa. The owner's special Okinawa Soba soup is made by using plenty of Rishiri kelp and bonito flakes that have been marinated the day before to create a rich soup stock, and blended with a light pork stock taken in a separate pot. The synergistic effect of umami from inosinic acid and glutamic acid creates a clear soup stock with a rich flavor. The fat is carefully removed and the result is gentle on the body, allowing you to drink all the juice. Other dishes are seasoned using this soup stock as a base.
