ChefJunji Mizuki - A man who sincerely pursues delicious yakitori
Owner Mizuki Junji is originally from Aichi Prefecture. He opened a yakitori restaurant in the downtown area of Gifu City, a neighboring prefecture, because he had 10 years of experience as a Japanese chef at a famous restaurant in the area. Before opening Yakitori Mizuki in 2012, he also trained at the famous yakitori restaurant Sengame in Nagoya. Furthermore, the chicken that is skewered in his restaurant every day is freshly slaughtered Omi Jidori chicken procured from nationally renowned producer Kashiwa no Kawanaka in Otsu, Shiga. He carefully grills the chicken over Kishu Binchotan charcoal every day before serving it to his guests.

Because they purchase whole Omi Jidori chickens and butcher them in-house, they have a wide selection of rare cuts such as collarbone and chikara kobu in addition to the standard thigh meat and tsukune. There are an astonishing 25 types of yakitori on the yakitori menu alone. Omi Jidori thigh meat has a pleasant texture and a moderate amount of fatty flavor. To bring out the flavor of each cut, they use two grills with different heat levels. For example, meatballs and thigh meat are served covered in the rich aroma of charcoal.

"Lately, I've probably been more into grilling vegetables than grilling chicken," says Mizuki-san, the owner, with a shy smile. In the serving baskets on the counter, fresh vegetables from local Gifu farmers are lined up, such as white asparagus and bamboo shoots in early spring. Tomatoes from Hashimoto Farm in the neighboring city of Kakamigahara are grilled over charcoal and drizzled with plenty of Parmesan cheese. These carefully prepared vegetable skewers and yakitori go perfectly with wines that Mizuki-san personally tasted and selected.
Shiga's Omi Jidori chicken, which has firm flesh and great flavor, is grilled over Kishu Binchotan charcoal.
Located near Gifu City's Yanagase Shopping Arcade, the setting for the popular song "Yanagase Blues," this yakitori restaurant attracts foodies from all over Japan, as well as locals. Owner Mizuki Jun
...ji gained experience at a famous Gifu restaurant before training at Nagoya's famous yakitori restaurant, "Sengame." In addition to his skills in butchering, skewering, and grilling that he inherited from his prestigious restaurant, he is also renowned for his discerning eye for ingredients, which he developed during his time as a Japanese chef. The chicken used is Omi Jidori chicken from Shiga, which has firm flesh and a strong flavor. Charcoal-grilled seasonal vegetables are also a proud dish.
